Dry Stout w/ Oysters
Jax Oyster Stout is a dry-style stout made with 1.5lb per barrel whole oysters, shell and all. We took the unshucked oysters, cleaned them, then steeped them in the boiling wort. The shells provide calcium carbonate to raise the wort's alkalinity, making for a full and silky body, while the oyster meat and liquor provide subtle minerality and brine, complimenting the roasty and dry characteristics of the stout base. Enjoy with a plate of fresh oysters for ultimate pairability!
